Kubota tasting

Kubota is the brand name for sake produced by Asahi Shuzo brewery which was founded in 1830 in Niigata prefecture. Perhaps the best known premium sake in the world, it is produced by one of the largest premium sake breweries in Japan. Originally known as Asahiyama, the name was changed to Kubota in the mid-1980's when it gained massive popularity as appreciation for premium (i.e."special designation") sake in Japan took off.

Asahi Shuzo was one of the pioneers of the movement toward drinking premium (sometimes generally referred to as "Ginjo") sake which began as recently as 50 years ago, and was among the first sake brewers to use stainless steel tanks. The use of stainless steel is more hygenic, reducing the amount of unwanted bacteria during fermentation, producing a cleaner sake with subtle floral rice-derived aromatics. This point of difference was essential to the establishment of the distinctive style of their sake.

We'll be pouring two of the best known sake from the Kubota line this Saturday from 5-7PM: Kubota Hekiju (Yamahai Junmai Daiginjo) and Senju (Tokubetsu Honjozo). Please visit us to sample these "legendary" brews that were instrumental in launching the premium sake movement.
